He began his culinary journey inspired by his desire to master the craft and was particularly influenced by his time in San Francisco, where he worked alongside prominent chefs like Michael Tusk and Janine Falvo. These experiences instilled in him a deep appreciation for discipline and the creative potential of combining global culinary techniques.

Roncoroni is the co-founder of "Al Mercato" in Milan, a dining concept that marries fine dining with casual street food, showcasing dishes ranging from gourmet burgers to haute cuisine creations. His culinary philosophy focuses on emphasizing the essence of ingredients, often drawing inspiration from emotions, seasons, and memories to craft visually and gastronomically engaging dishes.
